This should come as no surprise to any of you, but I love ALL cheese. And I wouldn’t be doing my job if I didn’t share with you this seriously simple recipe with cottage cheese. Now before you dismiss this cheese as something your Grandma used to feed you, consider reading a bit further to see how I use it in this yummy recipe.
Again, to me (and probably you, if you’re reading this) ALL cheese, is good cheese. So naturally, it was a no brainer that me, a penchant of parmesan, a Dairy Queen, a Cheesehead, would partner with Hood Cottage Cheese to showcase fun ways you can switch up this classic curdy goodness. And truthfully, cottage cheese is far more versatile than you might expect.
The most obvious choice for me, was making cottage cheese into a dip. I love dips of all flavors, colors, and consistencies. And paired with a plate of healthy veggies, I thought that making a Cottage Pimento Cheese dip would be amazing.
The recipe, like traditional pimento cheese, is incredibly easy. Rather than using mayonnaise, as some do for pimento dip, I substituted Hood’s Cracked Pepper flavored cottage cheese for the base. Before you southerners roll your eyes, hear me out, because it’s actually delicious and even better, lower calorie option. What’s great about this Hood Cracked Pepper option is that it’s already packed with flavor so you can skip the salt and pepper that you might traditionally add to Pimento Dip.
1 container of Hood Cracked Pepper Cottage Cheese
1-2 jars pimento peppers
3 -4 cups shredded cheddar cheese
4 ounces cream cheese
I like to add edible flowers to my trays. They aren’t available everywhere all year round, but if you can find them at your local farmer’s market or grow them yourself, I recommend using them for a pop of color.
1. Combine all ingredients into a medium sized mixing bowl. Stir well.
2. Add additional cayenne pepper or jalapeños for those who enjoy a little extra heat!
3. Whip up a crudités try by cutting up some colorful veggies. I like to use:
Raw beets as chips
4. Add crackers or pits chips to the tray. I love a classic Ritz Cracker with Pimento.
5. Serve anytime, anywhere. It’s a huge hit!
